KC-500 series knives have same blades with KC-400 series.

The traditional Japanese style, magnolia wood handles w/plastic bolster.Beautiful damascus blades made of 11 Layers damascus-patterned with White steel #2 cutting edge, which provides excellent edge retention, HRC 60 or more. The traditional O-shaped natural wooden handles made of magnolia wood w/plastic bolster are very comfortable to cut. This KC-500 series kitchen knives are also made by famous traditional craftmen of “越前打刃物 ECHIZEN-UCHIHAMONO”.
